There are many more online photography resources out there, of course, but here are some you may not find through a regular search (except Digital Photography School).

Document Your Life in Photos with Willette
Begins September 7. This one is about taking self portraits. Looks like a cool class.
Digital Photography 101 with Erin Manning (ReneePearson.com)
Begins September 15. For beginners with any type of digital camera.
The Very Basics with Katrina Kennedy (DebbieHodge.com)
Begins September 21. Description says, "digital slr, point and shoot, even camera phones will be covered."
Picture Fall with Tracey Clark (BigPictureScrapbooking.com)
Begins October 1. This month-long class/photo project is more about inspiration and creativity than the technical aspects of photography (though you can learn some of that by experimenting and paying attention to photo settings). I will be taking this class!
Get Great Photos with Any Camera with Elisha Snow (BigPictureScrapbooking.com)
Begins October 28. This class is for anyone, no matter what kind of
camera you own.
The Photographers' Workshop by Karen Russell
The next workshop runs from January to March, 2011. I'm sure this one would be stellar, too.
