- having Monday off. Hooray for Victoria Day!
- making and eating oatmeal pancakes* topped with berries, bananas, maple syrup, and cinnamon on the holiday morning. So good! (Thanks for the recipe, Aunt Gloria!) I had forgotten to put the oatmeal in buttermilk before I went to bed, but remembered at 1:30 a.m. when Georgia woke me up. Very glad I got up and did it.
- being able to see the floor in Sophia and Madeline's room after we (mostly I) cleaned it up on Monday. I was in there for hours. How do they manage to make it so messy? It's quite remarkable.
- going for bike rides/walks with the girls and discovering the awesome asphalt paths between Lakeview and 25th and 25th and Parliament. They're very smooth and wide. Perfect for Madeline's training wheels. (She refuses to ride across a driveway, so riding on sidewalks can be rather tedious.)
- having a good talk with Mom on the phone Monday night (although I was very sorry to hear that my Grandma M. was ill with a GI bug which landed her in the hospital for a few days).
- attending a two-day course to learn the basics of Adobe InDesign CS3. I love software! Especially design software. (And anything that gets me out of the office for a couple days is a bonus.)
- getting that talk with my babysitter out of the way and having it go better than expected. I offered to help her update her resume and spent a couple hours doing that today. Perhaps she won't even need it; she was called this evening to go for an interview at a retirement home tomorrow morning.
- attending the school's spring BBQ and carnival on Thursday evening. The carnival, slice-of-pie sale, and raffling of 16 big gift baskets were new undertakings this year and I think they were a great success. Bravo to those who organized it. The girls loved it!
- receiving Lesson 9 for my Library of Memories class. This is the point in the class where we start scrapbooking. I actually made a page this weekend!
- hearing how well Sophia and Bronwyn are doing with their reading in school. They were both tested this week and scored very well (both above their grade level). Yeah!
- having a good workout in my dance class on Saturday (and getting through it without my joint hurting). I haven't worked that hard in awhile. We're all trying to improve our assigned dance for the end-of-year recital (June 14). Mine is the Light Jig.
- attending Laurel's Silpada jewelry party this afternoon. Lots of sterling silver. Beautiful stuff! Her neighbour/ friend started selling it recently. Would anyone want to attend if I hosted a party?
- holding a sleeping baby (two-month old Gabriel).
- ordering volumes 3 and 4 of my blog books.
Oatmeal Pancakes
Soak overnight:
2 cups large oat flakes
2 cups plus approx. 2 tbsp. buttermilk
Next morning stir in (a fork works well):
2 large eggs
Add and stir gently:
1/2 cup whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
2 tablespoons melted butter
Spoon rounds of the thick batter onto a lightly oiled non-stick griddle at medium heat (350 degrees if electric griddle). Cook for three to four minutes per side or until cooked through. Makes 16 to 18 small pancakes.
